We roast whole pigs, lambs, and goats for all types of celebrations. This fascinating tradition is a feast for all senses: the aroma of meat slow-roasting golden brown, the heat of the fire, the sizzle of the juices. Our roasts are succulent and intensely flavorful from special marinades. We spit-roast the animal over a live, almond-wood fire for six to ten hours, depending on size. The meat is savory, aromatic, tand delicious.
Sourcing: Our pigs come from third-generation, organic Clark Summit Farm in Marin County. The pigs range freely on organic pasture and are butchered humanely, which produces meat of exceptional quality. We need at least two weeks' notice before your event to procure a pig.
Roasting the animal is a long and labor-intensive process, involving several people over several days. Our customers find that it is well worth the expense.
